Aam Panna, also known as Aam Ka Panna or Aam Jhora, is a delightful Indian summer drink made from unripe green mangoes. It’s the perfect way to refresh and rehydrate during the scorching heat. Let’s explore how to make this tangy and flavorful beverage:
Ingredients:
- Raw Mangoes: 2 medium-sized unripe green mangoes (about 400 grams)
- Water: 2 cups (for pressure cooking)
- Sugar: 1 ½ cups (or use jaggery powder, equivalent to 325 grams of sugar)
- Cardamom Powder: 1 teaspoon
- Roasted Cumin Powder: 1 teaspoon
- Black Pepper Powder: ¼ teaspoon (optional)
- Black Salt: 2 teaspoons (you can use regular white salt or pink salt as an alternative)
- Mint Leaves Sprigs: For garnish
Method:
- Boiling Method:
- Wash the mangoes and cut them into chunks.
- Boil the mango chunks in 2 cups of water until they turn soft.
- Blend the boiled mangoes to create a smooth pulp.
- Add sugar, cardamom powder, roasted cumin powder, black pepper (if using), and black salt to the mango pulp. Mix well.
- Dilute the concentrate with chilled water (about 9 tablespoons of the syrup for 1 liter of water).
- Garnish with mint leaves and serve chilled.
- Roasting Method:
- Roast the mangoes directly over an open flame until the skin is charred and the flesh is soft.
- Let the roasted mangoes cool, then peel off the skin and extract the pulp.
- Follow the same steps as above, mixing the pulp with sugar, spices, and water.
